After an austere selection, came the classic red vinification and fermentation in large oaken winemakers and then the ripening for 6 months in 500ltr barrels (30% new barrel) and 6 more months in old large oaken tanks of 3000ltr.

Nose: Characteristic aromas of small red fruit (wild-strawberry, pomegranate, reddish white-cherry, cherry plum), wild plum and sour apple contribute to the intense “green” and unripened dimension, imperceptible barrel and spices.
Mouth: Fresh with high acidity that offers liveliness, without high volume but with exquisite tasting complexity and an elegant presence of tannins. Staying in the glass or pouring in a pitcher “opens” the wine aromatically letting its attractive character to fully develop. A good choice for burgers with beetroot sauce, pasta with meatballs and tomato sauce or minced meat, steak or pork with spices ,mashed sour apple and celeriac. Also, with grilled salmon or medium-grilled red tuna.
